# Directions:

01 - Preheat oven to 350°F. Grease a 24-cup mini muffin pan or line with mini paper liners.
02 - In a microwave-safe bowl, melt butter. Stir in sugar, eggs, and vanilla extract until smooth.
03 - Add cocoa powder, flour, salt, and baking powder. Stir just until combined.
04 - Spoon batter evenly into prepared mini muffin cups, filling each approximately 3/4 full.
05 - Bake for 12-15 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
06 - Let cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
07 - Beat cream cheese and butter together until creamy. Gradually add powdered sugar and vanilla, then beat until fluffy. Add milk as needed for a spreadable consistency.
08 - Once brownie bites are completely cool, pipe or spread a dollop of frosting on each.
09 - Top with red, white, and blue sprinkles. Add mini sparklers or festive picks if desired.

# Expert Advice:

01 -
  • They're small enough to eat three in a row without guilt, yet fudgy enough to feel completely indulgent.
  • The cream cheese frosting adds a subtle tang that keeps them from tasting one-dimensional and sweet.
  • You can make them ahead and actually have dessert ready when guests arrive, which never happens in real life but somehow does with these.
02 -
  • Do not bake these a minute longer than necessary because the difference between fudgy and dry is about 90 seconds, and it's impossible to reverse.
  • Your cream cheese must be actually softened, not just sitting on the counter for five minutes, or it'll stay lumpy and ruin the frosting texture.
03 -
  • Pop rocks or edible glitter mixed in with the sprinkles takes these from festive to genuinely memorable without any extra effort.
  • A tiny piping bag with a small round tip makes frosting application look deliberate and pretty rather than slapped-on and casual.
