# Directions:
01 - Preheat the oven to 350°F. Line an 8x8-inch baking pan with parchment paper, allowing extra paper to hang over for lifting later.
02 - Combine crushed graham crackers, melted butter, and sugar in a bowl. Mix thoroughly, then press evenly and firmly into the base of the prepared pan. Bake for 10 minutes. Let the crust cool while preparing the filling.
03 - Using an electric mixer or whisk, beat softened cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition.
04 - Blend in sour cream, flour, milk, black sesame paste, vanilla extract, and a pinch of salt until the mixture is just combined and smooth, avoiding overmixing.
05 - Pour the cheesecake batter over the pre-baked crust, smoothing the surface. Bake for 30 to 35 minutes, or until the center is just set but still has a slight wobble.
06 - Remove pan from oven. Allow to cool to room temperature, then refrigerate for at least 3 hours or until completely firm and chilled.
07 - Use the parchment paper overhang to lift the cheesecake from the pan. Cut into bars and, if desired, sprinkle with toasted black sesame seeds before serving.
