13 - 2 lbs russet potatoes, peeled and cut into fries

# Directions:
01 - Preheat oven to 425°F. Line a large baking sheet with parchment paper.
02 - Combine potato fries, vegetable oil, salt, paprika, and black pepper in a mixing bowl then toss to coat evenly.
03 - Spread seasoned fries onto the prepared baking sheet. Bake for 25–30 minutes, turning halfway, until golden brown and crisp.
04 - Pat steak cubes dry using paper towels to ensure even browning.
05 - In a large bowl, mix Cajun seasoning, smoked paprika, garlic powder, onion powder, thyme, oregano, black pepper, and salt. Add steak cubes and toss until evenly coated.
06 - Heat olive oil in a large cast-iron skillet over medium-high heat. Add steak bites in a single layer, working in batches if needed. Sear each side for 1–2 minutes until well browned and cooked to preferred doneness.
07 - Reduce heat and add butter to skillet. Toss steak bites until coated and glossy. Remove from heat and sprinkle with chopped parsley.
08 - Plate hot steak bites alongside crispy fries and serve immediately.
