01 - Heat a grill pan or large skillet over medium-high heat.
02 - Coat chicken breasts evenly with olive oil, Cajun seasoning, salt, and black pepper.
03 - Grill or sauté chicken for 5 to 6 minutes per side, or until the internal temperature reaches 165°F. Remove from heat and let rest for 5 minutes. Thinly slice the chicken breast across the grain.
04 - In a large mixing bowl, gently toss chopped romaine with Caesar dressing until fully coated. Add half of the Parmesan cheese and toss again.
05 - Lay tortillas on a flat surface. Evenly distribute the dressed salad among the tortillas. Top with sliced Cajun chicken, cherry tomatoes, remaining Parmesan cheese, and croutons if desired.
06 - Fold in the sides of each tortilla and roll up tightly. Slice each wrap in half on the bias. Serve immediately.
