Caprese Chicken Skillet (Print)

Vibrant Italian-inspired chicken with tomatoes, mozzarella, and basil cooked in one skillet for maximum flavor.

# Components:

→ Chicken

01 - 4 boneless, skinless chicken breasts
02 - 1 teaspoon kosher salt
03 - 1/2 teaspoon freshly ground black pepper
04 - 1 tablespoon olive oil

→ Caprese Topping

05 - 2 large ripe tomatoes, sliced
06 - 8 oz fresh mozzarella, sliced
07 - 1/2 cup fresh basil leaves, torn

→ Balsamic Glaze

08 - 1/3 cup balsamic vinegar
09 - 1 tablespoon honey

# Directions:

01 - Season both sides of the chicken breasts generously with kosher salt and freshly ground black pepper.
02 - Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 5-6 minutes per side until golden brown and cooked through, reaching an internal temperature of 165°F. Remove from skillet and set aside.
03 - Reduce heat to medium. Arrange tomato slices on top of the chicken breasts. Place mozzarella slices over the tomatoes. Cover the skillet and cook for 2-3 minutes until the cheese melts completely.
04 - While the cheese is melting, combine balsamic vinegar and honey in a small saucepan over medium heat. Simmer for 5-7 minutes, stirring occasionally, until the mixture thickens to a syrupy consistency.
05 - Sprinkle fresh basil over the chicken. Drizzle the warm balsamic glaze over each serving.

# Expert Advice:

01 -
  • It delivers restaurant-quality flavor using ingredients you probably already have on hand.
  • The balsamic glaze adds a sweet-tart punch that turns simple chicken into something guests will ask you to make again.
  • Only one skillet to wash means you get to enjoy dinner instead of standing over the sink.
02 -
  • Don't skip drying the chicken before seasoning, moisture is the enemy of a good sear.
  • If your mozzarella isn't melting, your skillet probably lost too much heat when you added the toppings, just cover it longer or pop it under the broiler for thirty seconds.
  • The balsamic glaze will thicken more as it cools, so pull it off the heat when it's slightly thinner than you want.
03 -
  • Pound the chicken breasts to an even thickness before cooking so they cook uniformly and stay juicy.
  • Make extra balsamic glaze and keep it in a squeeze bottle, it's incredible on salads, roasted vegetables, and even strawberries.
  • If you don't have a lid for your skillet, a large plate or sheet of foil works perfectly to trap the steam.
