# Expert Advice:

01 -
  • Those little jelly cubes give you something playful to do while you sip, turning a drink into an experience.
  • It tastes indulgent and special but actually comes together in under thirty minutes of active work.
  • The balance of bitterness and sweetness feels more sophisticated than it should for something this simple.
02 -
  • Don't skip blooming the gelatin—trying to dissolve it directly in liquid creates lumps that no amount of stirring will fix.
  • The chilling time is non-negotiable; rushing this step means you'll get a slushy mess instead of cubes with actual structure.
  • If your cream mixture seems too sweet, you haven't tasted it with the bitter coffee jelly yet—the combination balances itself beautifully.
03 -
  • A wide bubble tea straw makes this exponentially more fun to drink and prevents you from getting a face full of jelly cubes when you sip too quickly.
  • Slightly oversweet condensed milk can be balanced by using a more robust coffee or adding a tiny pinch of salt to the jelly.
