# Components:

→ Chicken

01 - 4 boneless, skinless chicken breasts (approximately 1.5 pounds)
02 - 1 teaspoon kosher salt
03 - 1/2 teaspoon black pepper
04 - 1 teaspoon Italian seasoning
05 - 2 tablespoons olive oil

06 - 4 garlic cloves, minced
07 - 1 small yellow onion, finely diced
08 - 1 cup long-grain white rice, rinsed
09 - 2 cups low-sodium chicken broth

10 - 3/4 cup freshly grated Parmesan cheese

12 - 2 tablespoons unsalted butter

# Directions:

01 - Generously season both sides of the chicken breasts with kosher salt, black pepper, and Italian seasoning.
02 - Heat olive oil in a large, deep skillet with a lid over medium-high heat. Sear the chicken breasts for 3 to 4 minutes per side until golden brown. Transfer chicken to a plate; it will finish cooking later.
03 - Reduce heat to medium. Add the diced onion and cook for 2 to 3 minutes until softened. Add minced garlic and sauté for 30 seconds until fragrant.
04 - Stir in rinsed white rice and toast for 1 minute, then pour in the chicken broth. Use a wooden spoon to scrape any browned bits from the bottom of the skillet.
05 - Nestle seared chicken breasts on top of the rice. Cover and simmer over low heat for 18 to 20 minutes, or until rice is tender and the chicken is fully cooked with an internal temperature of 165°F.
06 - Remove chicken to a plate and keep warm. Stir Parmesan cheese, heavy cream, unsalted butter, and parsley into the rice. Mix until the rice is creamy and well combined.
07 - Return chicken to the skillet, spooning some creamy rice over the top. Garnish with additional parsley and serve with lemon wedges if desired.
