20 - 4 large flour or whole wheat tortillas or flatbreads
21 - 1 cup finely shredded red cabbage
22 - 1 cup baby spinach or arugula
23 - 1/2 cup pomegranate seeds
24 - 1/2 cup thinly sliced cucumber
25 - 1/2 cup halved cherry tomatoes
26 - 1/2 cup pickled red onions or pickles
27 - 1/4 cup fresh mint leaves
# Directions:
01 - Combine all marinade ingredients in a large bowl. Add chicken slices, coat thoroughly, cover, and refrigerate for at least 1 hour, up to overnight for enhanced flavor.
02 - In a small bowl, stir together Greek yogurt, lemon juice, tahini (if desired), minced garlic, parsley, salt, and pepper. Refrigerate until needed.
03 - Preheat oven to 425°F (220°C) or heat a grill pan over medium-high heat.
04 - Remove chicken from marinade, shaking off excess. Arrange on baking sheet or grill pan. Roast or grill for 15 to 20 minutes, turning once, until fully cooked and edges are slightly charred. Rest for 5 minutes, then slice or shred.
05 - Warm tortillas or flatbreads briefly in a dry pan or oven to enhance pliability.
