Directions

Phase 01

Preheat Oven and Prepare Sheet Pan: Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil.

Phase 02

Season and Arrange Sweet Potato Wedges: In a large bowl, toss sweet potato wedges with olive oil, smoked paprika, garlic powder, salt, and black pepper. Arrange evenly on one side of the prepared baking sheet.

Phase 03

Prepare and Season Chicken Thighs: Pat chicken thighs dry. In a small bowl, combine olive oil, smoked paprika, salt, and black pepper. Coat chicken thighs with seasoning mixture and place skin side up on the other side of the sheet pan.

Phase 04

Start Roasting: Roast sweet potatoes and chicken in the oven for 25 minutes.

Phase 05

Prepare Honey Garlic Sauce: In a small bowl, whisk honey, minced garlic, gluten-free soy sauce, Dijon mustard, and apple cider vinegar until well combined.

Phase 06

Glaze Chicken: After 25 minutes, remove sheet pan from oven. Brush chicken thighs generously with honey garlic sauce.

Phase 07

Finish Roasting: Return pan to oven and roast an additional 10 to 12 minutes, until chicken reaches an internal temperature of 165°F (74°C) and sweet potato wedges are tender and golden.

Phase 08

Optional Broil for Caramelization: Broil pan for 2 to 3 minutes for extra caramelization if desired, monitoring closely to prevent burning.
