03 - 12 medjool dates, pitted

# Directions:
01 - Combine almond flour, shredded coconut, pitted dates, fresh lemon zest, and lemon juice in a food processor. Pulse until the mixture is coarse and slightly combined.
02 - Add limoncello liqueur and vanilla extract to the processor. Continue pulsing until the mixture further combines and begins to stick together.
03 - Drizzle in melted coconut oil and blend until the mixture is sticky and cohesive when pressed between your fingers.
04 - Scoop out heaping tablespoons of mixture and roll between your palms to form uniform balls.
05 - Roll each ball in finely shredded coconut until evenly coated.
06 - Set the balls on a parchment-lined tray and refrigerate for at least 30 minutes to allow them to firm up.
07 - Place the finished bites in an airtight container and refrigerate for up to one week.
