11 - 1 cup heavy cream, cold

# Directions:

01 - Line a 8x8 inch square baking tin with parchment paper, leaving some overhang for easy removal.
02 - In a food processor, pulse biscuits or graham crackers into fine crumbs. Add melted butter, sugar, and lemon zest; mix until evenly moistened. Press firmly into the bottom of the prepared pan. Chill in the freezer for 10 minutes.
03 - In a large bowl, combine skyr, cream cheese, powdered sugar, vanilla, lemon zest, and lemon juice. Beat with a hand mixer until smooth and creamy.
