# Directions:
01 - Preheat oven to 350°F. Line muffin tin with 12 paper liners.
02 - In a bowl, coat diced apple with lemon juice, brown sugar, and ground cinnamon. Set aside.
03 - In a large bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and cinnamon.
04 - In a separate bowl, mix melted unsalted butter, granulated sugar, eggs, and vanilla extract until smooth. Stir in cooled sweet tea.
05 - Gently combine wet and dry mixtures until just incorporated. Fold in the prepared apple mixture.
06 - Spoon half of the batter into muffin liners. Place one caramel candy in the center of each, then cover with remaining batter.
07 - Mix granulated sugar with cinnamon and sprinkle evenly over each muffin.
08 - Bake for 18–20 minutes, until a toothpick inserted (avoiding caramel) comes out clean.
09 - Allow muffins to cool in the pan for 10 minutes. Insert a popsicle stick into the center of each muffin while still warm.
10 - Transfer muffins to a wire rack to cool completely before serving.
