12 - 2 cups shredded sharp cheddar cheese
13 - 1 cup shredded mozzarella cheese

# Directions:
01 - Preheat the oven to 425°F and line a baking sheet with parchment paper.
02 - In a bowl, combine cauliflower florets with olive oil, garlic powder, smoked paprika, salt, and black pepper. Spread evenly on the prepared baking sheet.
03 - Roast the cauliflower for 15 minutes, stirring halfway through to ensure even cooking.
04 - Remove cauliflower from the oven, toss with buffalo wing sauce, and return to roast for an additional 5 minutes. Set aside.
05 - In a small bowl, mix ranch dressing with chopped chives and dill if using.
06 - Lay out bread slices and spread the ranch mixture on one side of each slice. On four slices, layer half the cheddar and mozzarella cheeses, then top with buffalo cauliflower, followed by the remaining cheese. Cover with remaining bread slices, ranch side down.
07 - Heat a large skillet or griddle over medium heat. Spread softened butter on the outer sides of each sandwich.
08 - Grill sandwiches for 3 to 4 minutes per side, pressing gently, until bread is golden brown and cheese is melted.
09 - Allow sandwiches to cool for 1 minute, then slice and serve warm.
