01 - Wash the baby potatoes thoroughly and place them in a large microwave-safe bowl. Add enough water to fully cover the potatoes and season with 1 teaspoon salt.
02 - Cover the bowl with a microwave-safe lid or plate. Microwave on high for 7 to 8 minutes, or until the potatoes can be easily pierced with a fork. Adjust cooking time based on potato size and microwave wattage.
03 - Drain the cooked potatoes thoroughly and transfer them to a clean kitchen towel. Pat them dry to remove any excess moisture.
04 - Preheat your oven broiler or set an air fryer to 425°F.
05 - Arrange the potatoes on a parchment-lined baking sheet. Using the bottom of a glass or a sturdy measuring cup, gently press each potato to flatten to about 1/2 inch thickness.
06 - Drizzle the olive oil evenly over the smashed potatoes. Sprinkle with garlic powder, smoked paprika, black pepper, and sea salt.
07 - Place the baking sheet under the broiler or in the air fryer. Cook for 5 to 7 minutes until the potatoes are crisp and golden on the edges.
08 - Remove from the oven. If desired, sprinkle with chopped parsley and grated Parmesan cheese before serving.
