03 - 1 small onion, finely diced
04 - 2 tablespoons fresh parsley, chopped (optional)

05 - 1 large egg
06 - 1/3 cup all-purpose flour (approximately 1.4 oz), plus additional for dusting
07 - 1/2 teaspoon salt
08 - 1/4 teaspoon black pepper

# Directions:

01 - In a large bowl, mix together mashed potatoes, chopped ham, diced onion, parsley if using, egg, flour, salt, and pepper until a cohesive, thick mixture forms.
02 - With hands lightly dusted in flour, form the mixture into eight patties approximately 2.5 inches in diameter and half an inch thick; dust each lightly with flour.
03 - Warm vegetable oil or butter in a large skillet over medium heat until shimmering.
04 - Cook patties in batches, avoiding overcrowding, for 3 to 4 minutes per side until crisp and golden brown.
05 - Transfer cooked patties to a plate lined with paper towels to absorb excess oil. Serve warm.
