Sparkling probiotic soda with citrus juices, mint, and ice for a fresh, tangy summer drink. Vegan and gluten-free.

01 - 4 cups filtered water
02 - 1/4 cup organic cane sugar
03 - 2 tablespoons water kefir grains or ginger bug
04 - 1/4 cup fresh lemon juice

05 - 1/2 cup fresh orange juice
06 - 1/2 cup fresh lime juice
07 - 8 fresh mint leaves
08 - 4 thin orange slices
09 - Ice cubes, to serve
# Directions:
01 - Pour filtered water into a clean glass jar. Stir in organic cane sugar until completely dissolved. Add water kefir grains or ginger bug, and lemon juice. Mix gently using a non-metallic spoon.
02 - Cover the jar with a breathable cloth or coffee filter, securing it with a rubber band. Allow the mixture to ferment at room temperature (68–77°F) for 24–48 hours, until a gentle fizz develops and a tangy aroma is present.
03 - Remove and strain out kefir grains or ginger bug using a fine mesh strainer. Reserve grains or bug for future batches if desired.
04 - Transfer the fermented soda base to a pitcher. Add fresh orange juice, lime juice, and mint leaves. Stir delicately to blend flavors.
05 - Fill glasses with ice cubes. Pour the mocktail over the ice and garnish each serving with an orange slice and extra mint leaves as preferred. Serve immediately for optimal carbonation.
