# Directions:
01 - Preheat the waffle iron according to manufacturer’s directions and lightly grease with butter or oil.
02 - In a mixing bowl, stir together grated sweet potato, egg, milk, melted butter, flour, baking powder, salt, and cinnamon if using until uniformly blended.
03 - Spoon half of the batter onto the preheated waffle iron and spread evenly to cover the surface.
04 - Close the lid and cook for 4 to 6 minutes, or until the waffle is crisp and golden brown.
05 - Remove the cooked waffle carefully and repeat the process with the remaining batter.
06 - Enjoy warm, paired with preferred toppings such as yogurt, maple syrup, fresh fruit, or chopped nuts.
