- Salt and Black Pepper: season every bite. Freshly ground pepper really wakes up the flavor

Instructions
- Preheat and Prepare:
- Heat your oven to 190C or 375F. Coat a medium casserole dish with butter or spray to prevent sticking
- Rice the Cauliflower:
- If using fresh cauliflower break it into florets and pulse in a food processor until it looks like grains of rice. Measure out four cups for the casserole
- Sauté the Aromatics:
- Melt butter in a large skillet on medium heat. Add your onion and cook for about three minutes until just turning translucent. Toss in the minced garlic and continue stirring for another minute until fragrant but not browned
- Cook the Cauliflower Rice:
- Tip in your riced cauliflower and stir well to coat with the butter and onion mix. Keep the heat medium and cook for five to six minutes stirring now and then until the cauliflower softens a bit and most moisture has disappeared. This ensures your casserole does not turn watery
- Add Spinach:
- Add chopped spinach to the pan and cook alongside the cauliflower rice. Stir frequently until leaves are wilted and tender about two minutes
- Create the Alfredo Sauce:
- Lower the heat to a gentle simmer. Add heavy cream block of cream cheese three-quarters of the Parmesan half of the mozzarella salt pepper nutmeg and dried Italian herbs. Stir slowly but constantly as the cheeses melt to make the filling creamy smooth and thick
- Assemble the Casserole:
- Spoon the creamy cauliflower rice mixture into your prepared casserole dish. Smooth the top with your spoon. Sprinkle the remaining mozzarella and Parmesan evenly so you get a nice cheesy topping
- Bake to Bubbly Perfection:
- Slide the casserole onto the middle oven rack and bake for twenty to twenty-five minutes. Look for the sauce to bubble and the top to become golden brown
- Finish and Serve:
- Let the dish sit for five minutes so it sets and is easier to scoop. Scatter chopped fresh parsley over the top before serving for color and fresh flavor
